Harvested early in the cool morning air common in Paarl, the grapes are softly crushed and de stemmed and given 2 hours skin contact for extraction of fruity flavours from the grape. Free run juice was used for this wine, which was left overnight in a stainless steel tank to settle, only clear juice is used for fermentation. Fermentation occurs
