Compared to Trinidad and Mauritius, rum production in Panama occurred much later, in 1908. It was a Spanish immigrant, Don Jos Varela Blanco, who set up the first mill used to grind sugar cane in a town called Tekel. Zaka Panama Rum has its roots in Pes, in the heart of Herrera province, on the Azuero Peninsula, where the best rum in the country is still produced. In a
