Beginning with the harvest of Palomino grapes in Jerez, Spain, the process utilizes a series of barrels known as criaderas. Each criadera holds vinegar with similar flavor profiles but varying aging periods. When bottling, the solera, containing the oldest vinegar, is never fully emptied. Instead, it is blended with vinegar
